Ingredients to Cook Jollof Rice
Before you can be able to cook the famous Nigerian delicacy, you need to have all the ingredients. They include:
- 2 scotch bonnet pepper
- 4 cups of long-grain rice
- 2 tablespoons of cooking oil
- Chicken or beef
- 1 teaspoon of curry powder
- 2 fingers of ginger
- 2 bay leaves
- Foil wrapper
- 4 red bell peppers
- 1 big onion
- 2 cups of water or meat stock
- 1 teaspoon of thyme
- 1 canned tomato paste
- Seasoning cubes to taste
- Salt to taste
- 1kg of meat or chicken
- 1 clove of garlic
- White pepper to taste
- Ground nutmeg to taste

How To Cook Jollof Rice
If you don’t know how to prepare the famous Nigerian delicacy that is served in almost every festival in the country, then you can follow the steps below, once you have all the ingredients prepared, you can start making the Jollof rice. Here is how it is made:
Step 1
Parboil the chicken or meat with lots of spices. And then you remove the water from the chicken and set the stock aside.
Step 2
Blend the red bell pepper, tomatoes, scotch bonnets, onions, ginger, and garlic. And then boil it till it is thick and there is no water left.

Fry the chicken or meat in oil till it is tender and in golden brown color and then you set it aside.
Step 4
Wash your rice and parboil it.

In a stainless pot, you heat a little of the used oil from frying your chicken or meat and then sauté the rest of your ominous till it is translucent. Add one teaspoon of curry and thyme, white pepper to taste, and a finger or a teaspoon of ground ginger with ground nutmeg.
How To Cook Jollof Rice – Step 6
Then you add your canned tomato paste and stir-fry until it has lost its sour taste. Add the blended tomato and pepper mix and stir while frying. Now, add the chicken stock and add to the mix. Taste the seasoning and add the salt and seasoning cubes if you want.

Add the parboiled rice to the stew base and stir it till all the grains are covered with the stew base. Leave it to simmer for about 10 minutes till all the water is absorbed.

Note: when you are cooking the jollof rice make sure that you use one tablespoon of vegetable oil and a tablespoon of butter instead of 2 tablespoons of vegetable oil.
